Jack Vidgen’s Garlic King Prawn recipe
Preparation time: 5 mins
Cooking time: 10 minutes
Ingredients:
24 Large Green King Prawns
8 cloves of Garlic (5 chopped, 3 crushed)
1 Eschallot (chopped finely)
2 Green shallots (chopped finely)
Handful of continental Parsley (chopped finely)
1/2 Cup Olive Oil
2 Tablespoons butter + 1 additional Tablespoon of Olive Oil
2 tsps lemon Zest
¼ Cup Lemon Juice
Lemon wedges and Crusty Bread for Serving
Method:
1. Prawns peeled deveined and butterflied.
2. All mixture (less lemon extract and butter/oil) total to Marinate 1/2 before cooking.
3. Heat vast wok until really hot.
4. Add cooking prawns and toss fast in wok until pinkish and baked through.
5. Serve prohibited and tip with chopped parsley and lemon wedges.
